Here’s a step-by-step recipe for making Hyderabadi Biryani using Orgo Hyderabad Biryani Masala:
Ingredients:
For the Marinated Chicken:
•Chicken: 500 grams (bone-in)
•Orgo Hyderabad Biryani Masala: 3 tablespoons
•Yogurt (curd): ½ cup
•Ginger-garlic paste: 1 tablespoon
•Green chilies: 2-3, finely chopped
•Turmeric powder: ¼ teaspoon
•Lemon juice: 1 tablespoon
•Mint leaves: a handful, chopped
•Coriander leaves: a handful, chopped
•Fried onions: ½ cup (store-bought or homemade)
•Salt: to taste
•Oil: 2 tablespoons
For the Rice:
•Basmati rice: 2 cups
•Water: 4 cups
•Whole spices: 2 bay leaves, 4-5 cloves, 2 cardamom pods, 1 cinnamon stick, 1 star anise
•Salt: to taste
•Saffron strands: a pinch, soaked in 2 tablespoons warm milk (optional)
For Layering:
•Fried onions: a handful
•Mint leaves: a handful, chopped
•Ghee: 2 tablespoons
Cooking Method:
1. Marinate the Chicken:
1.Clean the chicken pieces and pat them dry.
2.In a large bowl, mix Orgo Hyderabad Biryani Masala, yogurt, ginger-garlic paste, green chilies, turmeric powder, lemon juice, mint leaves, coriander leaves, fried onions, salt, and oil.
3.Add the chicken to this mixture and coat evenly.
4.Cover and let it marinate for at least 2 hours (overnight for best results).
2. Cook the Rice:
1.Wash and soak the basmati rice for 30 minutes.
2.Boil water with whole spices and salt. Add the soaked rice and cook until it’s 70-80% done (grains should still be firm). Drain and set aside.
3. Assemble the Biryani (Layering):
1.In a heavy-bottomed pot or handi, spread the marinated chicken at the bottom.
2.Layer the partially cooked rice over the chicken.
3.Sprinkle fried onions, chopped mint leaves, and saffron milk (if using) on top.
4.Drizzle ghee over the rice.
4. Dum Cooking:
1.Cover the pot with a tight lid or seal with dough to trap the steam.
2.Cook on low heat for 30-35 minutes. To ensure even cooking, place the pot on a tawa (flat pan) over the flame.
3.Check if the chicken is cooked and the rice is tender before turning off the heat.
5. Serve:
1.Gently mix the layers before serving to avoid breaking the rice or chicken.
2.Serve hot with raita, salad, or boiled eggs.
Tips:
•Use high-quality basmati rice for fragrant and fluffy biryani.
•For a smokier flavor, place a hot charcoal piece in a small bowl inside the biryani pot, drizzle with ghee, and cover for a few minutes.
