In a large bowl, take the rice flour and add salt. Optionally, you can add cumin seeds for a more aromatic flavor.
Gradually add warm water little by little and mix the rice flour with your hands or a spoon until it becomes a smooth, dough-like consistency.
The dough should not be too wet or too dry; it should hold together without crumbling. If it feels sticky, add a little more rice flour.
Prepare the Steamer:
Boil water in a large steamer or a pressure cooker without the lid (you can also use a traditional steamer if available).
Grease the steaming plate or tray lightly with oil or ghee to prevent sticking.
Shape the Dough into Orotti:
Take small portions of the dough and roll them into small balls. Flatten each ball into a thin, round disc (or “Orotti”).
You can use your fingers or a rolling pin to shape the dough into thin sheets about 1/4 inch thick. The thinner the sheet, the softer and more delicate the final dish will be.
Steam the Pathal Orotti:
Arrange the flattened discs (Orotti) on the greased steaming tray or plate, making sure they are not overlapping.
Place the tray in the steamer, cover, and steam for 15-20 minutes or until they are fully cooked and soft.
Ensure that the steam is consistent throughout the process for even cooking.
Serving:
Once cooked, remove the Pathal Orotti from the steamer and let it cool slightly.
Serve it hot with a side of curry, like chicken curry, beef curry, or a vegetable stew, or with coconut chutney or pickle.
