Cooking Method:
1. Marinate the Mutton:
1.Clean the mutton pieces and set them aside.

3.If using a pressure cooker, add a little water and cook for 4-5 whistles. For a pot, cook on low heat for 45 minutes to 1 hour, or until the mutton is tender and cooked through.
4. Layer the Biryani:
1.In a large pot or handi, spread a layer of the cooked mutton at the bottom.
2.Next, spread a layer of partially cooked rice over the mutton.
3.Sprinkle fried onions, chopped mint leaves, and saffron milk (if using) on top of the rice.
4.Repeat the layering process, finishing with a layer of rice on top.
5. Dum Cooking:
1.Cover the pot with a tight lid or seal it with dough.
2.Cook the biryani on low heat for 25-30 minutes, allowing the flavors to meld together. Alternatively, you can place a heavy pan or tawa under the pot to avoid direct heat.
6. Serve:
1.Gently fluff the biryani with a fork to mix the layers before serving.
2.Serve hot with raita, salad, or a boiled egg.

•For a richer flavor, you can add some ghee over the rice during the layering process.
•Always use good-quality basmati rice for the best aroma and texture.
•For extra heat, add a few extra green chilies when marinating the mutton.
