The flour mix typically contains rice flour, coconut, and yeast or baking powder to help the batter ferment and rise, giving it the characteristic soft texture and slightly sour flavor.

Instructions:
Prepare the Batter:
In a large bowl, add the Palappam mix and salt. Optionally, add sugar and coconut milk to the mix for added softness and flavor.
Gradually add warm water to the flour mixture, stirring continuously to avoid lumps. The batter should be smooth and have a consistency similar to pancake batter—neither too thick nor too runny. You can adjust the water to achieve this consistency.
Ferment the Batter:
Cover the batter with a clean kitchen cloth or lid and allow it to ferment for about 4-6 hours, depending on the temperature. If you’re in a cooler place, it may take longer.
The batter should double in size and have small bubbles on the surface. The fermentation gives the batter a slightly sour taste, which is characteristic of Palappam.
Cooking the Palappam:
Heat a Palappam chatti (a special shallow, rounded pan for making Palappam) or a non-stick frying pan over medium heat.
Lightly grease the pan with ghee or oil using a brush or paper towel.
Pour a ladle of the fermented batter into the center of the pan and swirl the pan to spread the batter evenly around the edges. The batter should form a thick layer in the center and thinner layers around the edges.
Cover the pan with a lid and cook for about 2-3 minutes until the edges turn crispy and golden, and the center is soft and cooked through.
Serving:
Once cooked, remove the Palappam gently from the pan and serve hot.
Palappams are traditionally served with vegetable stew, chicken curry, egg curry, or any other curry of your choice.
